Interestingly, wine was originally distilled into brandy for two simple reasons — as a method for preservation and easy transportation. Reducing the volume of the wine also made it cheaper because taxes were assessed by volume. The idea was that after transporting it, water would be added back into the distilled wine before consumption.
However, after being stored in wooden casks, people discovered that the distillation took on a rich, delightful flavor. Thus, brandy became its own beloved liquor. Nowadays, brandies offer a sweet, fruity flavor combined with the punch of alcohol.
Brandy can be unaged or aged in oak barrels between 2 and 30 years. Longer aging produces a more mellow oaky flavor and a lovely amber color.
There are various types of brandy, mostly defined by region. For example, high-end Cognac and Armagnac brandies can only be produced in the Cognac and Armagnac regions of France, respectively. Brandy de Jerez comes from Spain and must be aged in the Jerez region. Pisco comes from South America and Grappa is the Italian version.
The brandy industry is not strictly regulated but most brandies are aged in oak barrels. This gives the liquor its soft amber color. Sometimes caramel color and sugar are added to brandies that have not been aged in barrels to simulate the same appearance.
Well-aged, high-end brandies are often drunk straight to fully appreciate their flavor. Brandy can be enjoyed at room temperature from a voluminous brandy snifter or chilled for an after-dinner digestif. Brandy is also a popular base for cocktails and appears in many recipes.
