To qualify as Bourbon, the mash must have at least 51% corn and it must be aged in a new oak container. Legally, flavors and additives cannot be added to Bourbon as the recipe cannot be changed. Bourbon itself has a distinct flavor profile that is described as tones of vanilla, spice, caramel, and oak. The flavor is beloved and used in various cocktail recipes.

There are various types of bourbon available and distilleries achieve the differences by altering the ratio of grains or using a different process. For example, Tennessee Whiskey bourbon is filtered through charred maple wood before being casked in new oak barrels for aging. And sour mash bourbon is made from old mash that has been treated with acid to preserve it. In order to be called bourbon, there are a few specific requirements the spirit must fulfill. The mash must consist of at least 51% corn and the rest can be any cereal grain like rye or wheat. The grain is ground up, mixed with water, yeast, and often mash from a previous distillation (for consistency), and allowed to ferment. Next, it is distilled to between 65% and 80% alcohol. The clear-colored spirit is then sealed in new oak barrels to be aged for at least 2-4 years. It is during this process that it gains its beautiful honey color and takes on flavor from the vanillins and caramelized sugars in the wood.
